Waffles with Whipped Cream

    There's nothing better than homemade waffles. These waffles are perfect for breakfast, brunch, lunch or dessert. Serve with a side of fresh berries, if desired.

    Serves: 4 

    • 500ml full fat milk
    • 100ml whipping cream, chilled
    • 2 tablespoons oil
    • 250g plain flour
    • 3 eggs, separated
    • 50g caster sugar

    1. In a bowl, mix together the egg yolks and milk. Sieve the flour into the mix and stir in sugar. Mix to remove any lumps.
    2. In a separate bowl, beat the egg whites until stiff. Gently fold into the batter. Stir in the oil.
    3. Grease a waffle maker and preheat. When hot, ladle batter into the well and close. Cook for 4 minutes. Remove and cool.
    4. Pour cream into a bowl and whip. Spoon some cream onto the waffle. Serve.
