These Christmas biscuits are crunchy and delicious. Biscuit dough is infused with orange flavours, shaped, deep-fried and dusted with icing sugar. Enjoy with a cup of tea or give them away as a food gift.

Makes: 12 dozen
125g caster sugar
1 tablespoon vanilla extract
2 tablespoons orange extract
1 1/2 tablespoons grated orange zest
175ml orange juice
250ml double cream
2 1/2 tablespoons baking powder
1 teaspoon salt
2 litres oil, for deep frying
250g sifted icing sugar, for dusting

In a large bowl, beat the eggs, sugar, vanilla, orange extract, orange zest, orange juice and double cream until very well blended. Stir in the baking powder and salt. Gradually mix in enough flour to form a soft but firm dough.
Heat 5cm of oil in a deep frying pan to 190 degrees C. On a lightly floured surface, roll out the dough to 5mm thick. Cut into 7.5x5cm rectangles. Make a slit in the centre of each rectangle and pull one side of the dough through the slit
Fry on each side in the hot oil until golden brown. Add more oil to the frying pan as needed. When cooled dust biscuits with icing sugar.
