Sadie's favourite rice pudding

    A scrumptious creamy rice pudding all kids and adults will simply love. Easy to prepare. Serve warm or chilled.

    Serves: 8 

    • 240ml water
    • 210g short grain or pudding rice
    • 1.2L milk, fresh or long life
    • 100g sugar
    • 1 or 2 strips lemon zest
    • 1 cinnamon stick
    • 1 pinch salt
    • dusting of sugar to serve
    • dusting of ground cinnamon

    1. Place water and rice in large pan. Stir and cover for 5 minutes until water is absorbed. Stir, don't let rice stick to pan. Then add all the rest of the ingredients, stir and bring to boil. Then simmer for about 20 minutes until rice is tender.
    2. Pour into individual bowls or one large bowl, allow to cool or chill if desired. Dust with sugar and cinnamon before serving. Enjoy
