Carrot and tomato soup

    A very special carrot and tomato soup that is sure to be a huge hit with the family. Ideal as a winter warmer and very easy to make.

    Serves: 6 

    • 4 carrots
    • 1 onion, chopped
    • 1 tin tomatoes
    • 1 garlic clove (optional)
    • 1 teaspoon ground coriander
    • 1/2 teaspoon ground ginger
    • 1/2 teaspoon ground cinnamon
    • 1/2 teaspoon ground cumin
    • 1/2 teaspoon ground turmeric
    • 1/2 teaspoon paprika
    • 2L water
    • 2 ham stock cubes
    • 2 dessertspoons caster sugar
    • 1 dessertspoon tomato puree
    • 1/2 teaspoon salt
    • 1/2 teaspoon ground black pepper
    • 150ml double cream

    1. Chop carrots and place in large pan with all the other ingredients, bring to boil and then turn down to simmer until carrots are tender, about 45 minutes.
    2. Blend or mash or leave as is for serving. I personally prefer to mash the carrots down before serving.


    For the kids who are not keen on vegetables, I recommend that you blend the soup. That way there is no sign of tomatoes, onions or carrots and you will find they will love this. Great way to get them to take some veg. Mine always go back for a second bowl.

    great soup but try it with a tin of tomatoes with chili and pepper yummy  -  03 May 2013
