4 (200g) salmon fillets
2 shallots, minced
1 bag of fresh spinach (about 250g)
100ml half fat crème fraiche
3 tablespoons chopped fresh parsley, chives and thyme
1/2 lemon, juiced
1 lemon, sliced

Heat 1 tablespoon of the butter in a frying pan over medium heat. Add the salmon fillets and cook for 15 minutes, turning over after 7 minutes.
In a large saucepan, heat 1 tablespoon of the butter and cook shallots over medium heat for 5 minutes. Add the spinach and cook until the water has completely evaporated. Add the creme fraiche and reduce till thickened.
Place the salmon fillets on a serving platter and sprinkle with lemon juice. Sprinkle with herbs and garnish with lemon slices. Serve with spinach.
this recipe was good, it wasn't horrible but it also wasn't outstanding. Not sure if I will make it again. Had to add more creme fraiche as it didn't seem 'creamy' enough. It was good for an experimental dinner but something was missing. - 09 Dec 2010
