I love shellfish and especially mussels. I like the taste so much that I came back from the farmers' market today with some tomatoes and fresh mussels and created this recipe. So good! Crusty bread is essential, of course.

Ingredients
Serves: 4
1 onion, minced
3 tablespoons of olive oil
500g fresh Scottish mussels
2 tomatoes, cubed
3 thyme sprigs
salt and pepper to taste
100ml white wine
Method Prep:10min › Cook:8min › Ready in:18min
Cook the onion for 5 minutes in the olive oil in a medium frying pan over medium heat.
Add the tomatoes and thyme, then season with salt and pepper. Add the white wine and cook for 5 minutes.
Add the mussels (in several batches if the frying pan is crowded) and cover for 3 minutes. If the mussels are not opened, cover and cook for one or 2 more minutes. Remove any unopened mussels and discard. Serve immediately.
