    About this recipe: This tasty recipe is perfect for fussy eaters and children who don't like to eat their vegetables. They won't even know that they are eating vegetables and they will love these croquettes! Kids will like them served with ketchup for dipping.

    Serves: 4 

    • 2 carrots, peeled and grated
    • 1 courgette, washed and grated
    • 1 potato, peeled and grated
    • 1 egg
    • 200g grated Gruyere cheese
    • 3 tablespoons olive oil
    • salt and pepper to taste

    1. Preheat oven to 200 C / Gas 6.
    2. In a medium bowl, add all the grated vegetables, the egg, the grated cheese, the olive oil and season with salt and pepper.
    3. Form the croquettes into patties and transfer to a large baking dish or on a baking tray. Cook in the oven for 10 minutes, remove from the oven and turn the croquettes over. Cook for 10 more minutes.
