Orange Rosemary Muffins

    A lovely muffin that isn't too sweet. Chopped fresh rosemary and orange zest flavour this simple muffin, which is absolutely fantastic with tea. Neither the orange nor the rosemary is overwhelming; both just add a lovely hint of their respective flavours. Remember not to over-mix the muffin mixture, otherwise your muffins won't rise properly!

    Makes: 8 muffins

    • 1 egg
    • 180ml milk
    • 125ml vegetable oil
    • 1 tablespoon grated orange zest
    • 1 1/2 tablespoons minced fresh rosemary
    • 250g plain flour
    • 5 tablespoons caster sugar
    • 3 teaspoons baking powder
    • 1 teaspoon salt

    1. Preheat the oven to 200 C / Gas 6. Grease a muffin tin or line with paper cases.
    2. Combine the egg, milk, oil, orange zest and rosemary; stir to combine.
    3. In another bowl, mix together the flour, sugar, baking powder and salt. Add the wet mixture, and fold together until just combined. Don't overmix, otherwise your muffins will be dense and won't rise properly. Don't worry - the mixture will be lumpy!
    4. Bake in the preheated oven for 20 minutes. Remove from tin immediate to cool on a wire rack.
