Chewy chocolate cookies

    These chocolate cookies are soft and chewy, ie absolutely irresistible. Somewhere between a soft brownie and a chewy cookie. Bring these to work to make friends you thought you never had!! You could add some chopped chocolate (plain or white) or chopped nuts, if desired - though they're gorgeous as is.

    Makes: 33 cookies

    • 225g unsalted butter, softened
    • 300g caster sugar
    • 1 teaspoon vanilla extract
    • 2 eggs
    • 250g plain flour
    • 55g cocoa
    • 3/4 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt

    1. Cream together the butter, sugar and vanilla till pale. Add the eggs one at a time, beating after each addition.
    2. In another bowl, combine the flour, cocoa, bicarb and salt. Gradually add this to the butter mixture. Cover with cling film and chill in the fridge for 1 hour.
    3. Preheat the oven to 180 C / Gas 4.
    4. Roll the dough into 3cm balls and place 5cm apart on ungreased baking trays (don't flatten the balls; the cookies will spread!). Bake for 8-10 minutes, or until edges are firm. Cool on wire racks.

    why do you have to leave it in the fridge for ages???? i just wanna cook 'em and eat 'em!!!  -  21 Apr 2011


    , Hello i'm trying to do this recipe and i dont know what i'm doing wrong, i am following the ingredients and method all correctly but when i place and get them out of the oven, the cookies have just spread and dont look or taste like cookies they are very thin as well please could you help me? many thanks  -  26 Feb 2011
