About this recipe: These chocolate cookies are soft and chewy, ie absolutely irresistible. Somewhere between a soft brownie and a chewy cookie. Bring these to work to make friends you thought you never had!! You could add some chopped chocolate (plain or white) or chopped nuts, if desired - though they're gorgeous as is.

    sweettooth Cheshire, England, UK

    1. Cream together the butter, sugar and vanilla till pale. Add the eggs one at a time, beating after each addition.
    2. In another bowl, combine the flour, cocoa, bicarb and salt. Gradually add this to the butter mixture. Cover with cling film and chill in the fridge for 1 hour.
    3. Preheat the oven to 180 C / Gas 4.
    4. Roll the dough into 3cm balls and place 5cm apart on ungreased baking trays (don't flatten the balls; the cookies will spread!). Bake for 8-10 minutes, or until edges are firm. Cool on wire racks.
