French green beans with Parma ham

French green beans with Parma ham

About this recipe: A lovely side dish or starter of French green beans and Parma ham. I tend to serve this with Italian dishes such as veal or pork saltimbocca or marsala along with rosemary potatoes. Also nice cold as a salad for BBQ's.

Serves: 2

  • 1 generous handful trimmed French green beans
  • 2 tablespoons extra virgin olive oil
  • 2 slices Parma ham, torn into bite size pieces
  • salt and freshly ground pepper to taste
  • 1 tablespoon good quality balsamic vinegar

Prep:5min  ›  Cook:15min  ›  Ready in:20min

  1. Cut the beans in half. Heat a frying pan with the olive oil to medium heat and add the beans. Stir occassionally so as to not burn the beans. After 9-10 minutes add the ham.
  2. Add seasoning and continue to stir. Once beans are tender, turn off the heat and add the vinegar.
  3. Place into a serving plate and serve.

Make in advance and serve as a cold salad with other salads for a BBQ.

Also nice with Prosciutto or replace with chopped cherry tomatoes.
