Prawn cocktail on mixed greens

    A fantastic take on prawn cocktail that will impress everyone yet it's so easy to make.

    Serves: 6 

    • 150g light mayonnaise
    • 2 teaspoons brandy
    • 2 teaspoons ketchup
    • salt and freshly milled black pepper
    • 2 tablespoons finely chopped fresh dill
    • 500g small cooked, shelled and deveined prawns
    • 6 medium white mushrooms, trimmed and thinly sliced
    • 6 red radishes, trimmed and thinly sliced
    • 1 hard-boiled egg, sliced (optional)
    • 4 handfuls mixed greens (mesclun mix)

    1. Mix the mayonnaise with the ketchup and brandy. Season with salt and pepper and stir in the dill. Combine prawns, mushrooms, radishes and egg in a mixing bowl. Add the dressing and toss. Arrange the greens on a large serving platter and place the prawns on top. Serve immediately with toast or baguette.
