Sage leaf fritters

    Anyone who loves sage absolutely must try this tasty recipe. Using home-grown sage is best for this recipe because then you can be sure it's organic. The larger the leaves, the better.

    Serves: 4 

    • 25 to 30 large fresh sage leaves
    • 225g flour
    • 1/2 teaspoon baking powder
    • 75ml milk
    • pinch of salt
    • 2 eggs
    • vegetable oil for deep-frying

    1. Wash the sage leaves under cold water and dry them well with kitchen paper.
    2. Combine the flour, baking powder, milk, salt and eggs and work with an electric hand-held mixer into thick batter. Cover and let stand at room temperature for at least 1 hour.
    3. Heat the oil. When tiny little bubbles form around the handle of a wooden spoon, you can start frying. Stir the batter with a spatula. Dip each sage leaf into the batter, using a fork, and drop it into the hot oil. Fry until golden on all sides and remove with a slotted spoon. Drain on kitchen paper and serve at once.
