Breaded Parmesan pork fillet

    Anyone who hasn't tried it should, because it's so worth it: oven baked pork fillet, breaded with herb and Parmesan breadcrumbs.

    Serves: 2 

    • 75g breadcrumbs
    • 50g Parmesan cheese, grated
    • 2 tablespoons mixed herbs
    • 2 eggs, beaten
    • 1 pork fillet

    1. Preheat the oven to 200 C / Gas 6.
    2. In a medium sized bowl, mix the breadcrumbs, Parmesan and mixed herbs. Get another medium bowl and beat the eggs. Roll the pork fillet in the eggs until covered, then do the same with the breadcrumbs; mix until covered. Pon a baking tray.
    3. Bake in the preheated oven for 45 minutes, then let the fillet rest for 10 minutes.
