    About this recipe: This is the best, the easiest and the most versatile banana loaf I have ever found. You can make it up, stick it in the oven, have a bath/do the dishes/hoover the house etc and come back in an hour to a fantastic loaf which makes the house smell amazing!

    Ingredients
    Serves: 15 

    • 55g butter or margarine
    • 200g sugar (white, brown, caster, granulated)
    • 1 egg
    • 3 very ripe bananas
    • 250g self raising flour
    • 1 teaspoon salt
    • pinch mixed spice
    • pinch nutmeg
    • pinch cinnamon

    Method
    Prep:10min  ›  Cook:1hr  ›  Extra time:15min cooling  ›  Ready in:1hr25min 

    1. Preheat oven to 180 C / Gas 4. Lightly grease a 20x10cm (8x4 in) loaf tin or use a loaf tin liner.
    2. In a large bowl, cream together butter and sugar (with an electric whisk this is faster).
    3. Beat in the egg and mashed bananas. Mix in flour and salt until just combined. Pour into prepared loaf tin.
    4. Bake in preheated oven for 1 hour. If top begins to brown too quickly, decrease heat slightly. Centre should be soft and chewy, while the outside, crisp and crunchy.

    Substitution

    This recipe is very adaptable and I have added walnuts, hazelnuts, raisins, half and half wholemeal flour and plain flour (with a little extra baking powder) and also made it into muffins and iced them with vanilla butter icing! Enjoy!

    Tip

    If you have bananas which are past their best and are going black but don't have time or the other ingredients to make this, freeze them. They will go completely black in the freezer but when you're ready to add them, pop them whole into the mircowave for 30 seconds on full power then the skin will peel off easily and you can mix them into the rest of the ingredients.

    Used different ingredients. I didn`t have any mixed spice so i added a pinch of groung ginger, it turned out lovely. - 17 Feb 2011

    Really easy to make and tasty too! Only thing was with a fan assisted oven had to keep turning it down so centre was quite soft. - 22 Feb 2011
