This is the best, the easiest and the most versatile banana loaf I have ever found. You can make it up, stick it in the oven, have a bath/do the dishes/hoover the house etc and come back in an hour to a fantastic loaf which makes the house smell amazing!
This recipe is very adaptable and I have added walnuts, hazelnuts, raisins, half and half wholemeal flour and plain flour (with a little extra baking powder) and also made it into muffins and iced them with vanilla butter icing! Enjoy!
If you have bananas which are past their best and are going black but don't have time or the other ingredients to make this, freeze them. They will go completely black in the freezer but when you're ready to add them, pop them whole into the mircowave for 30 seconds on full power then the skin will peel off easily and you can mix them into the rest of the ingredients.
