Potato and Celeriac Rosti

    A variation on potatoes. This is a super easy recipe requiring just two ingredients: potatoes and celeriac. The rosti is cooked in the oven at a high temperature, ensuring lovely crispy rosti. A tasty potato recipe suitable to accompany roasts or other meat meals.

    Serves: 6 

    • 450g (1 lb) potatoes, peeled
    • 1 large bullb celeriac, peeled
    • butter and olive oil for frying

    1. Grate both the potato and celeriac. Sandwich between kitchen paper or two tea towels and squeeze out as much moisture as possible.
    2. Put some butter and olive oil in a roasting tin and heat. Add the grated veg and press down firmly.
    3. Put more butter on top and put into oven on a high heat to roast for about 30 minutes.
    4. Remove from oven and turn over. Add more oil and butter and then put the turned rosti back into the roasting tin golden side down.
    5. Cook in oven for another 30 minutes until cooked, golden and crisp.
