About this recipe:
A tasty version of an old favourite. Chicken breasts are seasoned with garlic, lemon and thyme, then wrapped in streaky bacon and grilled. Serve with steamed cabbage and boiled new potatoes.
4 small chicken breasts, skinned and boned
1 clove garlic, finely chopped
salt and pepper to taste
1/2 teaspoon dried thyme OR 4 sprigs fresh thyme
8 rashers streaky bacon
500g (18 oz) cabbage, steamed
500g (18 oz) new potatoes, boiled

Cut lemon in half lengthways. Cut one lemon half into 4 wedges and set aside for the garnish.
Squeeze juice from other half over chicken. Sprinkle with the chopped garlic and a little salt and pepper.
Preheat grill to medium.
Place 1 thyme sprig on each breast or sprinkle over the dried thyme. Stretch bacon rashers with the back of a knife and wrap two rashers around each breast.
Grill for 5-7 minutes each side until done.
