Bacon-wrapped chicken

    A tasty version of an old favourite. Chicken breasts are seasoned with garlic, lemon and thyme, then wrapped in streaky bacon and grilled. Serve with steamed cabbage and boiled new potatoes.

    Serves: 4 

    • 1 lemon
    • 4 small chicken breasts, skinned and boned
    • 1 clove garlic, finely chopped
    • salt and pepper to taste
    • 1/2 teaspoon dried thyme OR 4 sprigs fresh thyme
    • 8 rashers streaky bacon
    • 500g (18 oz) cabbage, steamed
    • 500g (18 oz) new potatoes, boiled

    1. Cut lemon in half lengthways. Cut one lemon half into 4 wedges and set aside for the garnish.
    2. Squeeze juice from other half over chicken. Sprinkle with the chopped garlic and a little salt and pepper.
    3. Preheat grill to medium.
    4. Place 1 thyme sprig on each breast or sprinkle over the dried thyme. Stretch bacon rashers with the back of a knife and wrap two rashers around each breast.
    5. Grill for 5-7 minutes each side until done.
    6. Serve with the steamed cabbage and new potatoes


    AGA Tip - use grill pan, lined with foil on top set of runners in roasting oven.
