About this recipe: This tray bake recipe was one of my Mother-in-Law's standbys. A wonderful combination of walnuts, dates and a hint of vanilla. Easy to make and cut into squares, they are perfect for snacks or packed lunches.

Makes: 12 individual pieces

  • 75g (3 oz) margarine
  • 125g (5 oz) dark brown sugar
  • 75g (3 oz) walnuts, finely chopped
  • 75g (3 oz) self-raising flour
  • 2 eggs, beaten
  • 100g (4 oz) dates, chopped
  • few drops vanilla extract

Prep:10min  ›  Cook:40min  ›  Ready in:50min 

  1. Melt margarine and sugar in a pan over a low heat.
  2. Put all other ingredients into a bowl and add the melted margarine and sugar. Stir thoroughly and press into a greased swiss roll tin.
  3. Bake as you would for any other tray bake (180 C / Gas 4) for 30-40 minutes.
