Mum P's Chocolate Cake

    This is another of my Mother-in-Law's recipes. None of them take long. She wasn't a very patient cook but her Sunday roasts were to die for. Decorate with chopped walnuts at the very end, if desired.

    Serves: 12 

    • 25g (1 oz) cocoa
    • 75g (3 oz) margarine
    • 150ml (1/4 pint, 1 gill) milk
    • 1 egg, beaten
    • 125g (5 oz) caster sugar
    • 125g (5 oz) self-raising flour
    • few drops vanilla extract
    • 1 bar chocolate

    1. Line a 23cm (9 in) sandwich tin.
    2. Boil together the cocoa, milk and 50g (2 oz) of the sugar. Allow to cool.
    3. Cream together the rest of the sugar and the margarine. Add the beaten egg to which has been added the vanilla. Stir in the sieved flour and cocoa mixture.
    4. Put mixture into the lined sandwich tin and bake for 30 minutes on 180 C / Gas Mark 4 until firm and spongy.
    5. When the cake has cooked and cooled, melt the chocolate in a basin over hot water and add 2 tablespoons of hot water.
    6. Spread over the cake and leave to harden. Decorate with chopped walnuts.

    I made this cake. It tastes very nice but didn't rise as much as I was expecting. Not sure if this is the recipes fault though.  -  07 Dec 2010
