High Speed Mum's Gluten Free Chocolate Chip Cookies

    These gluten free cookies make a nice treat for the coeliac in the family. I use gluten free flour with the amount of baking powder and xantham gum called for given the weight of flour, and it works very well.

    Makes: 25 cookies

    • 110g (4 oz) unsalted butter
    • 130g (4 1/2 oz) caster sugar
    • 60g (2 oz) soft brown sugar
    • 1 teaspoon vanilla extract
    • 1 egg, beaten
    • 110g (4 oz) gluten-free plain flour
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon salt
    • 225g (8 oz) dark chocolate chips, coarsely chopped bar
    • 150g (5 1/4 oz) walnuts, chopped
    • If using GF flour, Xantham Gum used as per instructions on tin

    1. Cream together the butter, caster sugar, brown sugar and vanilla extract until light and fluffy. Beat in the egg.
    2. Sieve the flour with the baking powder, Xantham Gum and salt into the creamed mixture followed by the chocolate and walnuts.
    3. Cover and chill for 1 hour.
    4. Heat oven to 160 C / Gas mark 3.
    5. Roll mixture into small balls about the size of a walnut.
    6. Place balls on a baking tray, spaced about 4cm apart and bake for about 12 minutes.
    7. Cool on a wire rack before storing in an airtight container.


    If the GF mixture is too short. Next time use a fifth more flour and adjust the baking powder and Xantham Gum.

    I have made these delicious cookies twice now, omitted the xantham gum because I didn't have any, so doubled the amount of gluten-free flour, which worked pretty well to hold things together. Half plain, half self-raising worked fine too. Will definitely make them again.  -  18 Dec 2011

    I had to add extra flour as still very sticky after chilling. Turned out yummy but look like normal cookies not like the pic above ! 😀  -  09 Jun 2014
