About this recipe: These gluten free cookies make a nice treat for the coeliac in the family. I use gluten free flour with the amount of baking powder and xantham gum called for given the weight of flour, and it works very well.
If the GF mixture is too short. Next time use a fifth more flour and adjust the baking powder and Xantham Gum.

I have made these delicious cookies twice now, omitted the xantham gum because I didn't have any, so doubled the amount of gluten-free flour, which worked pretty well to hold things together. Half plain, half self-raising worked fine too. Will definitely make them again. - 18 Dec 2011

I had to add extra flour as still very sticky after chilling. Turned out yummy but look like normal cookies not like the pic above ! 😀 - 09 Jun 2014
