About this recipe: This is a very clean, simple and tasty way to cook mackerel. Instead of tomato and lemon, try stewing a few gooseberries with out any sugar and place them in the cavity of the fish before cooking.

Serves: 4 

  • 4 mackerel
  • salt and pepper to taste
  • 2 firm tomatoes
  • 1 lemon
  • 25g (1 oz) butter
  • fresh parsley

  1. Clean the fish and remove the heads. Season with salt and pepper.
  2. Lay each fish on a piece of buttered foil.
  3. Cut the tomatoes and lemon into slices then arrange alternate slices on each fish. Place a good sprig of parsley on top and dot with butter.
  4. Fold the foil up and seal into neat parcels.
  5. Place on a baking tray and bake in the oven at 180 C / Gas 4, until fish is thoroughly cooked and the flesh flakes easily with a fork.

Serving suggestion

The fish can be served in the foil or transferred to a serving dish together with the juices formed during cooking.
