Courgette and Brie Soup

    A very delicious and creamy courgette soup. Courgette combines with onion, potato, garlic, white wine and vegetable stock, and is then flavoured with lovely Brie cheese and double cream.

    Serves: 4 

    • 25g (1 oz) butter
    • 250g (9 oz) onion, finely chopped
    • 225g (8 oz) potato, peeled and diced
    • 1 clove garlic, finely chopped
    • 1 splash white wine
    • 300ml (1/2 pint) vegetable stock
    • 600g (21 oz) courgettes, chopped
    • 200ml (7 fl oz) milk
    • 225g (8 oz) Brie cheese, plus extra slices to garnish
    • 3 tablespoons double cream
    • 15 leaves basil, torn

    1. Melt the butter in a heavy-based pan and fry onion for 2-3 minute, until softened. Add the potato, garlic and wine and cook for a further 5 minutes.
    2. Stir in the stock and courgettes and bring to boil. Reduce heat, then cover and simmer gently for 20 minutes or until potatoes are cooked.
    3. Pour in the milk, add Brie and heat through gently until melted. Stir in the cream and torn basil leaves and warm through without letting it boil.
    4. Season and serve with extra slices of Brie on top if you like and sprinkled with basil.

    very tasty, creamy soup. The only thing I changed was that I'd grated the courgettes and added them at the end so they weren't overcooked. Thanks for sharing this recipe!  -  13 May 2011


    The brie didnt melt in my soup.. so I do not know if the brie in the UK is different than in the states. If I was going to serve this hot, I think I might make a cheese sauce and then stir that in. I was going to serve this as a cold puree so the cheese got blended in that way. The flavor was very good  -  02 May 2016
