About this recipe: This recipe makes 12 individual tarts - but you will need to either buy or make the pastry shells first. Top with whipped cream or custard for a heavenly summer dessert!

Ingredients
Serves: 12 

  • 12 prepared mini tart shells, baked
  • 150g (5 oz) caster sugar
  • 2 1/2 tablespoons cornflour
  • 1 pinch salt
  • 225ml (8 fl oz) apple juice
  • 500g (1 1/4 lb) fresh strawberries, hulled

Method

  1. To make glaze: Blend the sugar, cornflour and salt; stir in apple juice. Cook over medium heat, stirring constantly until smooth and thick. Allow to cool for 10 minutes.
  2. Spread a small quantity of the glaze over the bottoms of the tart shells. Arrange strawberries over the glaze, slicing if necessary to fit into the tarts. Spoon remaining glaze carefully over the berries, covering them well. Chill for 2 to 4 hours. Serve garnished with whipped cream or custard if desired.

Very tasty. One piece of advice: Do NOT take these tarts to a picnic! The glaze gets runny very fast in warm weather. - 21 Jul 2008
