Cherry cordials

    The cordial in this recipe is perfect! And so quick and easily made. Very nice for a holiday sweet or food gift.

    Makes: 40 chocolates

    • 40 to 50 Maraschino cherries
    • 57g soft butter
    • 290g icing sugar
    • 1 tablespoon cherry juice (from the jar of cherries)
    • 1/2 teaspoon vanilla extract
    • very small pinch salt
    • chocolate, melted, for dipping

    1. Drain and dry cherries.
    2. Cream butter with 128g sugar; add juice, vanilla, salt and then the rest of the sugar.
    3. Take a bit of the fondant (about the size of a big marble or small shooter); do a quick job in wrapping it around a cherry, then roll in your hands to smooth it over. Chill.
    4. Dip in chocolate.
