Savoury rice pudding

    Simple but tasty savoury baked rice pudding. You can use any rice or even barley! Boil a kettle to make stock from cubes or use prepared stock.

    Serves: 6 

    • 110g risotto rice
    • 1 stick celery, finely chopped
    • 1 shallot, finely chopped
    • 1 tablespoon savoury rice spice
    • 500ml chicken or vegetable stock
    • 200ml double cream or large dollop creme fraiche

    1. Preheat the oven to 180 C / Gas 4.
    2. Place rice, celery and shallot in greased ovenproof dish with a lid, add rice spice and pour stock over. Put lid on dish.
    3. Bake in the preheated oven until rice is soft and liquid absorbed, about 30 minutes. Stir in fresh cream or creme fraiche before serving.
