High Speed Mum's cranachan

    This traditional recipe is the one I use every year at Hogmanay dinner. If you leave the cranachan in a cool place for a while the oats expand and make a nice crunchy addition.

    Serves: 6 

    • 1/2 tub double cream
    • 1/2 tub low fat creme fraiche
    • a little icing sugar to taste
    • 2 tablespoons medium oats, toasted
    • 150g raspberries, fresh or frozen

    1. Whisk the cream until stiff and fold in the creme fraiche and as much icing sugar as you need to make it sweet.
    2. Fold in the oats and raspberries and any more icing sugar if the mixture seems a bit tart.
    3. Spoon into ramekins and serve.

    Serving suggestion

    Serve on a bed of grated chocolate or in a chocolate or brandy snap basket.


    To toast the oats put on a baking sheet and put into a high oven for a couple of minutes until golden brown.
