Cranberry and orange relish

    This makes a lovely accompaniment to the turkey on Christmas day or Thanksgiving dinner. Serve cold.

    • 2 oranges
    • 225g (8oz) golden caster sugar
    • 2 teaspoons lemon juice
    • 1 (25mm) piece root ginger, peeled and cut into strips
    • 340g (12oz) fresh or frozen cranberries
    • 1/2 teaspoon black pepper

    1. Pare zest from one of the oranges and cut into julienne strips.
    2. Squeeze the juice from both oranges.
    3. Combine sugar and lemon juice in a small pan. Bring to the boil slowly, then cook for 6 minutes or so, swirling the pan until the sugar begins to caramelise.
    4. As soon as this starts to happen, remove the pan from heat and add the remaining ingredients.
    5. Cook on a medium high heat, stirring frequently for 5 minutes or until cranberries are slightly broken but not mushy. Frozen cranberries will take 7 minutes.

    Can be made in advance and kept covered in the pantry.
