    About this recipe: A tasty supper dish that takes little time to cook. Serve with rice and seasonal vegetables or salad.

    Serves: 2 

    • 1 tablespoon olive oil
    • 340g (12oz) pork fillet, thinly sliced
    • 1 large onion, thinly sliced
    • 1 clove garlic, crushed
    • 110g (4oz) chestnut mushrooms or button mushroom, sliced
    • 100ml (3.5 fl.oz) creme fraiche
    • 1 rounded tablespoon wholegrain mustard
    • 1 good handful fresh basil

    1. Heat oil in a frying pan. Add pork and fry for 2 minutes over a high heat.
    2. Toss in the onion, garlic and mushrooms and cook for 4 to 5 minutes, stirring occasionally.
    3. Stir in the creme fraiche and mustard, then tear in the basil.
    4. As soon as the creme fraiche has gone runny, remove pan from heat.
