Custard Cream Biscuits

    I've had this recipe for custard cream biscuits since the kids were small. It makes delicious biscuits.

    Ingredients
    Makes: 12 biscuits

    • 55g (2 oz) margarine or butter
    • 55g (2 oz) sugar
    • 1/2 teaspoon vanilla essence
    • 70g (2.5 oz) plain flour or cornflour
    • 40g (1.5 oz) custard powder
    • 1/2 an egg

    Method
    Prep:10min  ›  Cook:10min  ›  Ready in:20min 

    1. Cream marg or butter with the sugar and flavouring.
    2. Sift flour and custard powder and add to creamed marg.
    3. Mix the enough egg to make a stiff but pliable dough.
    4. Roll out thinly on a floured board and cut into shapes.
    5. Bake in a moderate oven 180 C / Gas Mark 4.

    Serving suggestion

    Ice with water icing or sandwich together with butter icing using 3oz icing sugar and a little butter.

    Substitution

    I prefer to use butter for all my baking but this makes the biscuits quite rich.

    Just tried to make this and it turned out like cake mix, I don't think the egg should be added, will try without egg . I've not wasted the mix made 9 cup cakes.  -  09 Feb 2018

    Yummy reminded me of my primary school. A firm family favourite in our house. I tweaked by using coca aswell as custard. Yummy.  -  09 Jul 2016
