Shepherd's pie with curried mash

    Serves: 6 

    • 1 small onion, chopped
    • 450g (1 lb) lamb mince
    • 1 tsp thyme
    • 4 heaped tbsp plain flour
    • 2 tbsp tomato ketchup
    • 1 tbsp Worcestershire sauce
    • 350ml lamb or chicken stock
    • 6 tbsp olive oil
    • For the mash
    • 1.3kg (3 lb) potatoes, peeled, boiled and mashed
    • milk, butter, salt, pepper to taste
    • 1 tsp paprika
    • 1 tsp curry powder

    1. Make mash and set aside. Preheat oven to 220 C / Gas 7, heat oil in saucepan add onion and thyme and cook for 5 minutes.
    2. Add mince and colour slightly, add flour while still on heat and let the bottom catch slightly, take off the heat and add ketchup and Worcester sauce, mix well and add stock, simmer for 10 minutes.
    3. Transfer mixture to ovenproof dish. top with the mash and cook in oven for 35 minutes.
