Chicken soup (Homemade)

    My sister in law showed me how to make this soup, her mother makes it on their farm with the leftovers of a chicken dinner. As soon as I tasted it I was hooked.

    Serves: 4 

    • 1 chicken carcass
    • 100g (3 1/2 oz) chopped leftover chicken
    • 1 onion, chopped
    • 1 clove
    • 1 bay leaf
    • 1 chicken stock cube
    • 1 level tablespoon corn flour
    • 600ml (1 pint) milk
    • 4 tablespoons boiling water
    • 4 tablespoons cold water
    • 1/4 teaspoon nutmeg

    1. Break up carcass and add to a saucepan along with the chopped onion, bay leaf and clove.
    2. Dissolve the stock cube in the boiling water and add to the saucepan then pour in the milk.
    3. Simmer gently for 20 minutes then strain and return the liquid to the pan.
    4. Mix the cornflour with the cold water and add to the soup, while stirring all the time until soup comes to the boil and thickens slightly.
    5. Add chopped chicken and nutmeg, season to taste, cover and simmer for 15 minutes and its done.
