Mix the chicken with the Cayenne pepper, salt, black pepper and chilli powder (mix to taste if preferred). Using a griddle, chargrill the chicken, peppers and onion. (If you do not have a griddle you can stir fry or grill - ensure the chicken is cooked through and peppers and onions have taken on a slight charred effect).
Heat the tortillas either on the griddle or microwave for 30 seconds. The idea is to place everything in the centre of the table and individuals can construct their own fajita.
Place a little of the chicken, onion, peppers, a little grated cheese, a spoonful each of taco sauce and sour cream on each tortilla, roll up and eat. Delicious. Kids and adults both seem to enjoy them.
