Quick and easy Mexican chicken fajitas

    Delicious Mexican chicken fajitas with onion, peppers and sour cream. Perfect throw together quick meal easily adapted to increase quantities. Can be made the same way with beef strips. Serve with jacket potato and guacamole on the side. Refried beans and corn cobs also go nice on the side.

    Serves: 2 

    • 2 chicken breast fillets or 8 mini chicken fillets, cut into strips
    • 1 teaspoon Cayenne pepper
    • salt and black pepper
    • 1 teaspoon chilli powder
    • 1/2 green pepper, sliced
    • 1/2 red pepper, sliced
    • 1 red onion, sliced in half rings
    • 2 large handfuls grated Cheddar cheese
    • taco sauce
    • sour cream
    • 4 to 6 plain tortillas

    1. Mix the chicken with the Cayenne pepper, salt, black pepper and chilli powder (mix to taste if preferred). Using a griddle, chargrill the chicken, peppers and onion. (If you do not have a griddle you can stir fry or grill - ensure the chicken is cooked through and peppers and onions have taken on a slight charred effect).
    2. Heat the tortillas either on the griddle or microwave for 30 seconds. The idea is to place everything in the centre of the table and individuals can construct their own fajita.
    3. Place a little of the chicken, onion, peppers, a little grated cheese, a spoonful each of taco sauce and sour cream on each tortilla, roll up and eat. Delicious. Kids and adults both seem to enjoy them.
