Nourishing watercress soup

    Serves: 6 

    • 1 tablespoon organic sunflower oil
    • 1 large white onion, peeled and chopped
    • 1 large potato, scrubbed well and diced
    • 200g watercress, washed and roughly chopped
    • 800ml vegetable stock
    • black pepper to taste

    Prep:10min  ›  Cook:25min  ›  Ready in:35min 

    1. Heat the oil in a large saucepan and gently sauté the onion for 3 minutes.
    2. Stir in the potato and cook for a minute and then add the stock.
    3. Bring to a gentle boil and immediately reduce the heat and add the watercress.
    4. Simmer for 15 to 20 minutes.
    5. Use a hand blender or food processor and blend the soup (you may want to blitz it quickly so it stays a little chunky or blend until smooth).
    6. Taste and season with some black pepper. Simmer for a couple more minutes whilst you warm some bowls and then serve.


    As you serve the soup you may want to swirl some soured or soya cream through the soup to make it slightly more creamy in flavour as well as looking good.
