About this recipe: Not quite the thing for Halloween, as it is a summer drink. We only called it witches' brew as a joke in the first instance but the name stuck.

Serves: 25 

  • 3 oranges
  • 3 lemons
  • 1350g (3lb) sugar
  • 42g (1.5oz) tartaric acid
  • 1800ml (3pt) boiling water

  1. Grate the rind of the oranges and lemons and put into a large bowl with their squeezed juice.
  2. Add all the other ingredients.
  3. Pour over the boiling water and stir until the sugar is dissolved.
  4. Leave to cool and then pour into clean bottles or large jugs if you are to use it straight away.

Serving suggestion

Don't like bits in your drinks? Strain before bottling.


If you use golden granulated or caster sugar it makes the resultant liquid a lovely golden colour.
