Mocha truffles

    These dark chocolate truffles are the perfect after dinner treat. You can of course enjoy them whenever you want. They are flavoured with coffee liqueur and espresso.

    Makes: 60 truffles approximately

    • 300g dark chocolate, broken into chunks
    • 50g icing sugar
    • 100g butter, softened
    • 150ml creme fraiche
    • 2 tablespoons coffee liqueur
    • For the Coating
    • 250g chocolate (50%+ cocoa content), broken into chunks
    • 50ml strong espresso

    Prep:2hr  ›  Cook:5min  ›  Extra time:4hr setting  ›  Ready in:6hr5min 

    1. Melt chocolate in a double boiler. Once melted, stir in icing sugar and butter.
    2. Remove from heat and stir in creme fraiche and coffee liqueur. Beat for 1 minute, then chill until firm.
    3. Using a teaspoon, scoop some of the chocolate mixture and roll into balls.
    4. For the coating: Melt chocolate and espresso in a double boiler. Stir until smooth.
    5. Line a tray with greaseproof paper. Dip truffles into the warm liquid chocolate, then place onto tray. Allow to set.
    6. Once set, place each truffle in a small paper case. Store in an airtight container.

    These were SO good! I love making chocolates, but am always concerned about the amount of fat in using double cream to make the ganache (which is the standard way). Using creme fraiche is genius! You still get that rich, smooth , velvety taste and texture. Cannot recommend highly enough! I also varied the recipe, split it into smaller batches before adding the coffee, and swapped the coffee for orange flavouring, mint flavouring, caramel flavouring and amaretto to replace the coffee!  -  12 May 2014


    Really easy to make, and really yummy only problem I had was when adding the espresso the melted chocolate kept splitting so I left it out on my forth attempt  -  24 Dec 2013
