Chocolate Dipped Ginger Biscuits

    The wonderful combination of ginger and chocolate are brought together in these biscuits. A biscuit dough is topped with crystallised ginger, almonds, butter and sugar, baked, sliced and then dipped in melted chocolate.

    Makes: 70 

    • For the Biscuit Base
    • 200g plain flour
    • 1 pinch salt
    • 75g caster sugar
    • 1 teaspoon vanilla sugar
    • 1 egg
    • 75g butter, at room temperature
    • For the Topping
    • 100g crystallised stem ginger, finely chopped
    • 100g caster sugar
    • 50g butter
    • 50g whipping cream
    • 150g almonds
    • To Coat
    • 75g dark chocolate couverture

    1. Preheat oven to 200 C / Gas 6.
    2. Mix flour, salt, sugar and vanilla sugar.
    3. Beat egg and butter until fluffy. Add to the flour and knead with the dough hook of an electric mixer until smooth.
    4. Line a baking tray with baking parchment and roll out dough on the baking tray.
    5. To make the topping, place sugar, butter and cream into a small saucepan. Bring to the boil, sirring occasionally. Stir in almonds and ginger. Heat the mixture, then quickly spread over the dough.
    6. Bake in preheated oven for 15 minutes.
    7. Cut into thin strips whilst still warm and carefully place them on a wire rack to cool completely.
    8. Melt chocolate according to package instructions and dip one end of the strip in the chocolate, let set on wire rack.

    Dark chocolate couverture

    Can be purchased in speciality shops or online. If unavailable, you can use ordinary chocolate/cooking chocolate, but the finish will not be the same.
