    About this recipe: A delicious way of preparing beef mince. It's baked with bread, eggs, onion and herbs and spices. Serve thickly sliced hot or cold. It makes the perfect sandwich filler.

    Serves: 6 

    • 2 1/2 stale bread rolls
    • 3 tablespoons olive oil
    • 1 large onion, finely chopped
    • 4 tablespoons chopped fresh parsley
    • 1 clove garlic, finely chopped
    • 1 tablespoon tomato puree
    • 1 teaspoon herbs de Provence
    • 1 pinch cayenne pepper
    • 1/2 teaspoon sweet paprika
    • salt and pepper
    • 500g minced beef
    • 2 eggs
    • butter as needed

    1. Preheat oven to 220 C / Gas 7.
    2. Pour a little lukewarm water over rolls and soak.
    3. Heat oil in a small and saute onion until soft and translucent. Add garlic and parsley and saute for 2-3 minutes. Stir in tomato puree, herbs de Provence, cayenne, paprika, salt and pepper.
    4. Squeeze water from bread rolls. Mix together the bread, sauteed mixture, minced beef and eggs. Press into a loaf tin and bake in preheated oven for 50 minutes.
    5. Once the meatloaf is bubbling, add a few knobs of butter on top. When the meatloaf is brown and cooked through, turn oven off and allow to sit in oven for 10 minutes.
