Almond Star Biscuits

    A delicious Christmas treat, which is perfect anytime of the year. These buttery biscuits are enriched with almonds, iced and topped with coconut.

    Serves: 60 

    • For the Biscuit
    • 150g butter
    • 125g caster sugar
    • 125g ground almonds
    • 200g plain flour
    • 1 teaspoon baking powder
    • For the Topping
    • icing sugar
    • lemon juice
    • desiccated coconut

    1. Beat butter until fluffy, then stir in the sugar. Add almonds and sieve in flour and baking powder. Work into a dough, cover and chill for 1 hour.
    2. Grease a baking tray and preheat oven to 180 C / Gas 4. Flour a work surface and roll out the dough on it. Cut out stars and place on the prepared baking tray. Bake in preheated oven for about 10-12 minutes.
    3. Let biscuits cool. Meanwhile, mix just enough icing sugar and lemon juice to make a smooth icing. Coat cooled biscuits with the icing and sprinkle over desiccated coconut.
