Apple chutney with thyme

    This delicious chutney goes exceptionally well with pork and any other roasted meats. You can make this chutney ahead of time and store it in the refrigerator.

    Serves: 6 

    • 3 large apples, peeled, cored and chopped
    • 1 tablespoon dried thyme
    • 1 bay leaf
    • 50g caster sugar
    • 2 tablespoons apple schnapps or Calvados
    • 2 tablespoons apple cider vinegar
    • salt

    1. In a small heavy pan, combine apples, thyme, bay leaf, sugar, apple schnapps and apple cider vinegar.
    2. Simmer for 1 to 1 1/4 hours, partially covered or until the chutney is thick and sticky. Stir occasionally.
    3. Season to taste with salt. Remove bay leaf and serve warm or lukewarm.
