About this recipe: This dessert is a hybrid of cheesecake, apple pie and apple crumble. What else could you ask for? A pastry case is filled with sweetened quark, apples and topped with a delicious crumble.


Serves: 16 

  • For the Pastry
  • 300g plain flour
  • 150g unsalted butter
  • 100g caster sugar
  • 2 eggs
  • 1 teaspoon baking powder
  • rum essence
  • For the Filling
  • 500g quark
  • 30g unsalted butter, melted
  • 2 tablespoons sugar
  • 5-7 apples
  • For the Streusel
  • 200g plain flour
  • 100g caster sugar
  • 100g unsalted butter

  1. Work flour, butter, sugar, eggs, baking powder and rum essence into a pastry dough. Cover the and chill for 30 minutes.
  2. Preheat oven to 180 C / Gas 4. Line a baking tray with parchment paper.
  3. For the filling: Mix together quark, sugar and butter in a bowl until smooth. Peel the apples, core and chop finely.
  4. For the streusel: Mix flour with sugar and stir in the melted butter.
  5. Roll out pastry dough on a lightly floured surface. Place onto prepared baking tray.
  6. Spread quark mixture onto the dough, top with chopped apple and sprinkle with the streusel mixture.
  7. Bake in preheated oven for 1 hour.
