Easy Apple Cake

    This simple apple cake is quick to make. Cinnamon-spiced apples are topped with a batter and then baked. Enjoy with whipped cream or ice cream.

    Serves: 12 

    • 500g apples, peeled, cored and sliced
    • 50g sugar mixed with a little ground cinnamon
    • For the Batter
    • 80g butter, softened
    • 160g caster sugar
    • 1 organic lemon, zest grated
    • 2 eggs
    • 100g cornflour
    • 100g plain flour
    • 1 tablespoon baking powder
    • 125ml milk

    1. Layer apples in the bottom of a round silicone cake tin (or a springform tin lined with foil).
    2. Sprinkle cinnamon sugar over the apples and set aside for a few minutes.
    3. Preheat oven to 160 C / Gas 2 1/2.
    4. Mix all the batter ingredients together and use to cover the apples. Bake in preheated oven for about 45 minutes.
    5. Let cool in tin for 10 minutes, then invert cake and remove tin.

    Nice and simple to make. I used less sugar, I always do. The cake needed much longer in the oven, at 160 as recommended, as the apples came out really pale looking after 45 mins. Did another half hour to get it browner, but still doesn't look as toffee-ish as on the photo!  -  04 Oct 2013
