These apples are tender, succulent and bursting with flavour. They are stuffed with apricots, crystallised ginger and sultanas and baked with a rose water syrup.

Ingredients
Serves: 4
250g caster sugar
500ml water
2 tablespoons rose water
4 apples (Granny Smith or other)
50g dried apricots, chopped
2 tablespoons chopped crystallised stem ginger
100g sultanas
2 organic limes, zest grated

Preheat oven to 180 C. Grease a baking dish.
Bring sugar, water and rose water to the boil and simmer for 4 minutes. Pour liquid into baking dish.
Mix apricots, ginger, raisins and lemon zest together.
Core apples and stuff with dried fruit mixture. Transfer to baking dish and spoon over syrup.
Cover tightly with foil and bake in preheated oven for 20-30 minutes or until apples are soft. Baste apples occasionally with the syrup as they cook.
