Glazed Almond Hearts

    These gluten-free biscuits are not only delicious, but they are also easy to make. They are the perfect food gift for Valentine's day.

    Serves: 40 

    • 15g butter
    • 2 egg whites
    • 250g caster sugar
    • 1 teaspoon vanilla sugar
    • 1 pinch salt
    • 1 heaped tablespoon unsweetened cocoa powder
    • 2 teaspoons ground cinnamon
    • 1/2 teaspoon ground cloves
    • few drops rum essence
    • 250g ground almonds
    • 1/2 teaspoon baking powder
    • 2 tablespoons finely ground almonds
    • Icing
    • 150g icing sugar
    • 100ml water

    1. Preheat oven to 180 C / Gas 4.
    2. Melt the butter, then allow it to solidify. Set aside.
    3. Beat egg whites until stiff. Beat in the sugar, vanilla sugar and salt. Mix in the butter, cocoa, baking powder and spices.
    4. Fold 250g ground almonds into the batter. The dough should be quite firm.
    5. Sprinkle 2 tablespoons ground almonds over a work surface and place the dough on top.
    6. Lay a piece of cling film directly on top of the dough. Roll out to 1cm thickness. Remove cling film and cut out into hearts. NOTE: If the dough is very sticky, mix in more ground almonds.
    7. Transfer hearts to greased baking trays, leaving enough space for them to spread whilst cooking. Bake for 15 minutes.
    8. Meanwhile, bring icing sugar and water to the boil. Brush over the biscuits as soon as they come out of the oven. Allow to cool and set.
