About this recipe: These Christmas biscuits can be enjoyed anytime of the year. They are buttery and flavoured with almond brittle. If you are short of time, you can use shop-bought brittle.


Serves: 70 

  • For the Almond Brittle
  • 25g butter
  • 25g caster sugar
  • 50g chopped almonds
  • For the Biscuit Dough
  • 1 egg, separated
  • 125g butter
  • 125g caster sugar
  • 1 teaspoon vanilla sugar
  • 250g plain flour
  • 1 pinch baking powder

  1. To make the brittle: Gently heat butter and sugar in a small pan until the sugar dissolves. Add the almonds and heat briefly. Line a plate with greaseproof paper or greased foil and spread mixture over it. Let set and then crumble.
  2. Work the yolk, butter, sugar, vanilla sugar, flour, baking powder and brittle into a dough. Chill for 30 minutes.
  3. Preheat oven to 180 C / Gas 4.
  4. Roll dough out thinly and cut out small biscuits. Brush with beaten egg white and transfer to a parchment lined baking tray. Bake in preheated oven for 10-12 minutes or until golden brown.
