Chocolate and Date Squares

    These traybake is packed full of wonderful flavours and textures. A nut-enriched spiced date cake, is spread with apricot glaze and then topped with melted chocolate. You can use any flavour jam to make the glaze. Why not try it with marmalade?

    Serves: 40 

    • 130g butter, softened
    • 70g caster sugar
    • 1 teaspoon vanilla sugar
    • 3-4 small eggs
    • 1 teaspoon ground cinnamon
    • 1 pinch mixed spice
    • 150g dates, roughly chopped
    • 100g ground nuts
    • 2 tablespoons unsweetened cocoa powder
    • 80g flour
    • 40g cornflour
    • 2 teaspoons baking powder
    • 1 dash rum or cognac
    • 2 tablespoons caster sugar, for sprinkling
    • For the Glaze
    • apricot jam, mixed with a little water
    • dark chocolate cake covering

    1. Beat butter until fluffy. Gradually beat in 70g sugar, eggs and vanilla sugar. Stir in the cinnamon, mixed spice, dates, nuts, cocoa powder, rum, flour and cornflour. Fold in the baking powder last.
    2. Preheat oven to 180 C / Gas 4.
    3. Spread the batter about 3cm thick into a baking tray lined with baking parchment. Bake for about 20 minutes.
    4. Turn the cake out onto a sheet of baking parchment sprinkled with 2 tablespoons sugar. Brush the cake with diluted jam. Let cool.
    5. Melt dark chocolate cake covering in a double boiler spread over the cake.
    6. Cut the cake into large slices and then into small squares just before serving. This will ensure that they don't dry out.

    Dark chocolate cake covering

    Can be substituted for dark cooking or eating chocolate.
