Chocolate meringue morsels

    These meringue biscuits are light and very chocolaty. Beaten egg whites are flavoured with cocoa and dark chocolate before being baked to perfection. Enjoy with a big mug of tea.

    Ingredients
    Makes: 30 morsels depending on size

    • 50g dark chocolate, grated
    • 2 egg whites
    • 100g caster sugar
    • 1 teaspoon vanilla sugar
    • 1 tablespoon unsweetened cocoa powder

    Method
    Prep:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Preheat oven to 130 C / Gas 1/2 and line a baking tray with baking parchment.
    2. Beat egg whites until stiff. Gradually beat in the sugar until smooth and glossy. Fold in vanilla sugar, cocoa and chocolate.
    3. Use 2 teaspoons to make small heaps of batter on the baking tray. Bake in the middle of the preheated oven for about 30 minutes.

    Tips

    Use 1 teaspoon vanilla extract instead of the vanilla sugar. As with all gluten free recipes, read ingredient labels to ensure that all ingredients are 100% gluten free.

    I added some cinnamon sugar I had instead of the vanilla sugar. Definately for the sweet toothed.  -  04 Dec 2012
