A delicious traybake fruit tart. Sweetcrust pastry is topped with sliced plums, dotted with butter and sprinkled with cinnamon sugar before being baked. Enjoy with vanilla ice cream or whipped cream.
Mix flour and baking powder in a large bowl. Add 200g sugar, vanilla sugar and salt; mix together. Add butter and egg; knead into a smooth dough. Chill for 1 hour or overnight.
Wash plums, cut in half, remove stones and cut in half again (don't cut all the way through).
Preheat oven to 180 C / Gas 4. Grease a baking tray with butter.
Roll out the pastry on a floured work surface and line the bottom and sides of the baking tray with the dough.
Mix 2 tablespoons sugar with 1 teaspoon ground cinnamon. Set aside.
Lay quartered plums side by side onto the dough. If the plums are very small, arrange them in such a way that they overlap. Dot with butter and sprinkle with cinnamon sugar and almonds, if using.
Bake in preheated oven for about 30-40 minutes.
Remove tray bake from oven and allow to cool slightly. Cut into pieces and serve warm or cold.
