Marzipan biscuits

    If you love marzipan, you will love these biscuits. They are super-easy to make, but you need to make the dough ahead of time, as they need to dry overnight.

    Makes: 40 biscuits, depending on size

    • 500g marzipan
    • 100g icing sugar
    • 1 egg white
    • 20g plain flour
    • rose water

    1. Knead marzipan, icing sugar, egg and flour into a smooth dough. Roll out to 1cm thickness and cut out into whatever shapes you like.
    2. Line a baking tray with baking parchment and place the biscuits on it. Allow to dry overnight.
    3. Preheat oven to 160 C / Gas 2 1/2. Bake for 15 minutes until lightly brown. Let cool. Once cool, brush with rose water.

    I really liked the end result but found it a tricky dough to get right. On the given quantities it was too sticky to even begin rolling so I added more flour/icing sugar. I also added a chocolate icing which went down well.  -  07 Jan 2012
