Christmas Fruit Loaf

    A deliciously spiced loaf, which is perfect anytime of the year. It's made with pears, prunes, figs, raisins, hazelnuts and mixed peel.

    Serves: 14 

    • 250g dried pears
    • 250g prunes, pitted
    • 175g dried figs
    • 500ml water
    • 250g plain flour
    • 2 teaspoons baking powder
    • 50g caster sugar
    • 1 teaspoon vanilla sugar
    • 3 drops lemon extract
    • 1 teaspoon ground ginger
    • 1 pinch ground cloves
    • 2 pinches ground cinnamon
    • 1 tablespoon kirsch (cherry brandy)
    • 75g hazelnuts
    • 75g cut mixed peel
    • 100g raisins
    • 1 teaspoon instant powdered mash potatoes
    • 3 tablespoons cold water

    1. Place dried fruit in a saucepan, cover with water and leave to soak overnight.
    2. The next day, bring the soaked fruit to the boil in the same pan, boil for 2 minutes, drain and reserve liquid. Cool, then finely chop.
    3. Mix the baking powder with the flour and sieve onto the work surface. Make a hollow in the middle and place the sugar, vanilla sugar, lemon extract, ginger, cloves, cinnamon, kirsch and 2 tablespoons of the fruit water into it. Mix with flour and sugar into a paste. Add chopped fruit, hazelnuts, mixed peel and raisins. Knead everything together until fruit is evenly distributed. If the dough is too sticky, add more flour. Shape the dough into a loaf shape and lay onto a lined baking tray.
    4. Mix the instant mash with 3 tablespoons water and bring to the boil briefly. Brush over loaf.
    5. Preheat oven to 180 C / Gas 4 and bake for about 50-60 minutes.
