Simple Oat Cookies

    If you love all things oaty, these cookies will not disappoint. They are simple to make and taste fantastic. Enjoy with a mug of hot tea or coffee.

    Makes: 30 cookies

    • 250g butter
    • 500g porridge oats
    • 200g caster sugar
    • 3 eggs, beaten
    • 5 tablespoons plain flour

    1. Melt butter in a small saucepan over low heat (do not brown). Stir in oats and sugar until the sugar has completely dissolved. Remove from heat and let cool.
    2. Once completely cooled, stir in eggs. Sieve in the flour and stir well.
    3. Preheat oven to 200 C / Gas 6 and line a baking tray with baking parchment.
    4. Use a spoon to make small mounds of the mixture on the baking tray. Bake in preheated oven for 20-30 minutes.

    Tasted good after a few changes  -  16 Apr 2011  (Review from Allrecipes AU | NZ)


    Altered ingredient amounts. I used brown instead of white sugar, and added a few extra Tbls flour as it was a very wet mixture. it only took 10 minutes to cook. I used a slice tin, as the first batch came out with burnt edges  -  16 Apr 2011  (Review from Allrecipes AU | NZ)
