This is a super-quick and easy side dish to throw together anytime. Spinach is sauteed with red pepper, red onion and garlic. Simple and delicious.

1 large red pepper, coarsely chopped
1 tablespoon olive oil
1 small red onion, finely chopped
3 cloves garlic, finely chopped
250g fresh spinach
1/2 teaspoon salt
1/4 teaspoon pepper
1 pinch caster sugar

Heat olive oil in a large non-stick frying pan. Saute red pepper for about 1 minute. Add onions and garlic and saute until until they are soft, about 1-2 minutes.
Add spinach, salt, pepper and sugar and saute for another 1-2 minutes or until spinach has wilted.
